  • My Journey to Plant-based

I and myself went through different journeys since 2011 to learn about the connection between human being and food. The three-month journey at Kushi, the plant-based healing centre in Massachusetts, American, gave me the valuable knowledge of energy in food and how we can use it to heal our bodies and mind. These wisdom of yin and yang, of human and the universe, of all things created from energy, taught by the Japanese master George Oshawa made me understand food beyond its physical form and nutrition value. Another course at eCornell University on plant-based nutrition few months after that awed me with truths behind the food industry and how it had been doing damage to the human health, and once again with all its scientific studies over decades leaded me to the belief that Whole Food Plant-based is the healthiest diet for human.Not vegetarian, not vegan, but Whole Food Plant-based.

  • Đậu Đỏ Plant-based Kitchen

So there started my dream to spread this knowledge to the many people that I could. And Đậu Đỏ was born from this dream.Đậu Đỏ Plant-based Kitchen is where we make plant-based food beautiful, joyful, and tasteful. It is where we 100% home-made everything so we can proudly serve our Guests the best meal we could, the plant-based, beautiful, joyful, and tasteful meal, with love.

  • Đậu Đỏ, or the Red Bean.

Why Đậu Đỏ – the Red Bean, many people asked me. The symbol came very simple.When think of going on a plant-based diet, many people have the fear of ‘not getting enough protein’. But a quick search on google can bring you many informative studies to show that the protein in beans are no less than the protein in meat. Especially when beans are mixed with whole grains such as brown rice in a meal, the compounds of nutrition formed can give our bodies all the amino acids we need. So beans, they are an indispensable ingredients in a plant-based diet, the ingredients many people tent to forget.So Đậu Đỏ, The Red Bean, among many other ones, are picked. Đậu Đỏ has inside it the energy, like many other beans. It could sprout and grow into a tree from a bean of a thousand year. That is the strength of a bean. That is the strength we human need to get from food. Food should not be considered only a list of nutrition, food have to be understood in form of energy. What energy a piece of dead meat give us? The pain, the hatred, the anger, when the animal are killed.And then Đậu Đỏ, it looks like the human’s kidney. In Oriental Medicine, kidneys are the source of life. They give the body ‘ki’ or energy. In Western Medicine point of view, kidneys are also very essential to one’s well-being, they cleanse the blood, keep the body in balance. And it is how precious Đậu Đỏ is to us. Đậu Đỏ, or symbol of our whole food plant-based journey to many people, can changed lives.

  • Đậu Đỏ and the Movement

With a Whole food Plant-based diet, one will become healthier, one will find peace, and one will be in harmony with Mother Earth. Đậu Đỏ is not a restaurant, of course in my dream Đậu Đỏ will be many restaurants, but more important, Đậu Đỏ is the symbol of a Movement – the Movement of oneself towards being the doctor of his own body, the Movement of oneself getting to open his own heart to the others’ lives, the Movement of oneself toward finding peace, and harmony with the universe.
